Air Fryer Shrimp Zucchini and Peppers has a fabulous garlic parmesan seasoning and air fried to perfection for an amazing light and yummy meal!
Pat the shrimp dry with paper towels and place in a large bowl.
Slice the zucchini into 1/4 inch rounds and cut the red pepper into 1/4 inch slices. Place them in the bowl with the shrimp.
To the bowl add the olive oil, garlic, Italian seasoning, grated parmesan, kosher salt, and pepper. Toss until evenly mixed.
Place the shrimp and veggies into the air fryer basket (this fits perfectly in a 5.8 quart air fryer, if yours is smaller cook in two smaller batches). Set the air fryer to 390 degrees for 15 minutes, shake the basket halfway through cooking.
Serve as is or over buttered noodles or fettuccini alfredo.
