Buffalo Chicken Sloppy Joes is an easy and delicious one pan meal, a creative twist on an old favorite and a dinner the whole family will love!

Ingredients
  • 1 Tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 pound ground chicken
  • kosher salt, pepper
  • 1 10 oz can Rotel
  • 1 cup buffalo sauce
  • 4 hamburger buns
  • Optional: ranch dressing and/or blue cheese crumbles for topping
Instructions
  1. Set a large skillet over medium heat and add the olive oil and diced onion. Cook 4 to 5 minutes, stirring occasionally.

  2. Add the minced garlic and ground chicken to the skillet. Season with kosher salt and pepper. Cook 4 to 5 minutes, breaking it apart as it cooks.

  3. Add the Rotel and Buffalo sauce, cook over medium low heat for 5 more minutes, stirring occasionally.

  4. Serve on the hamburger buns and top with ranch dressing and/or blue cheese crumbles.

    Note: I mixed my blue cheese crumbles with the ranch dressing.
