A light and delicious side dish made with mashed sweet potatoes and topped with bacon
Roast sweet potatoes in a 400 degree oven for 45 minutes. Let cool and remove skins.
In a bowl with the peeled sweet potatoes add butter (your call, 1 or 2 Tbsp depending how buttery you like), brown sugar, cumin, cinnamon, kosher salt, and pepper. Mash together with a fork.
When serving top with bacon, maple syrup, and pecans.
