Sausage Gravy Breakfast Bites
These Sausage Gravy Breakfast Bites are like a mini version of a sausage biscuits and gravy casserole recipe.
I meal prepped them for my husband to take to work for the week for a quick breakfast on the go.
But you could easily serve them all at once for a family breakfast, or breakfast-for-dinner.

How to make Sausage Gravy Breakfast Bites
Start by making your sausage gravy in a cast iron skillet.
All the details for how to do this you’ll find in the recipe card.

Then cut 8 jumbo biscuits in a tube into sixths.
Spray 18 of the spaces in 2 12-count regular size muffins pans with nonstick spray.
Then add 2 to 3 pieces of the biscuit dough in each.

Crack 6 eggs in a bowl and season with kosher salt, pepper, and your favorite breakfast seasoning blend.
Beat the eggs with a fork and spoon them into the muffin pans over the biscuit dough.

Top them with shredded cheese and then scoop some of the sausage gravy over top.
You’ll still have some sausage gravy left to spoon over top when serving.

Finally, bake them in a 375-degree oven for 20 to 30 minutes.

My breakfast bites popped right out of these silicone muffin pans, no sticking at all.

Sausage Gravy Breakfast Bites
This Sausage Gravy Breakfast Bites recipe is a mini version of sausage gravy casserole perfect for a quick meal prepped breakfast on the go!
Ingredients
- 1 pound breakfast sausage
- 2 tablespoons butter
- 1/4 cup flour
- 2 1/2 cups whole milk
- kosher salt, pepper, breakfast seasoning blend of choice (optional)
- nonstick spray
- 1 (16-ounce) tube jumbo biscuits
- 6 eggs
- 1 cup shredded cheese of choice
Instructions

Set a large skillet over medium heat, add the sausage. Cook 6 to 8 minutes, stirring a few times and breaking apart with a spatula.

Add butter and once melted sprinkle some of the flour, stir until combined. Add a little more flour and stir. Then add the rest of the flour and stir for another minute or two.

Add the milk, kosher salt, pepper, and breakfast seasoning (if using) and bring to a boil. Once boiling, reduce the heat to low and stir occasionally for about 10 to 12 minutes.

Spray two 12-count regular size muffin pans with nonstick spray (I used silicone muffin tins and they did not stick at all, really just spray 18 of them). Cut each biscuit into sixths and put 2 to 3 pieces of biscuit dough into 18 of the muffins.

Crack eggs in a bowl, add kosher salt, pepper, and breakfast seasoning blend (if using). Beat with a fork and spoon some eggs into each muffin tin over the biscuit dough.

Sprinkle cheese over top of each and spoon the sausage gravy over top (you will have some sausage gravy left).

Bake in a 375 degree oven for 20 to 30 minutes. Let cool slightly before serving with the remaining sausage gravy over top.
