Sushi Salad with Wasabi Vinaigrette
I took my favorite sushi roll and created a lower carb version with a homemade dressing, Sushi Salad with Wasabi Vinaigrette was insanely delicious and fresh!!
Gotta love an easy, no cook meal for two!

How to make Sushi Salad with Wasabi Vinaigrette
Start by making the homemade wasabi dressing.
Put olive oil, rice vinegar, wasabi sauce, and soy sauce in a mason jar with a little kosher salt and pepper.
Then just shake and dressing is done 🙂

Now we can assemble the salads starting with dividing a 10-ounce bag of salad mix between two plates.
Drizzle some of the wasabi vinaigrette on the salad mix.

Then slice two mini cucumbers, an avocado, and a package of imitation crab meat.
And divide them between the two salads.

A few optional additions include drizzling sriracha mayo and ginger soy glaze over top.
Some pickled ginger is a must for me!
And black sesame seeds add a nice touch as well.

Now THIS is one gorgeous salad if I do say so myself!

Sushi Salad with Wasabi Vinaigrette
Sushi Salad with Wasabi Vinaigrette is a lower carb way to enjoy sushi on a fresh bed of greens with a homemade wasabi dressing!
Ingredients
- 2 1/2 tablespoons olive oil (or salad oil of choice)
- 1 1/2 tablespoons rice vinegar (or white vinegar)
- 1 tablespoon wasabi sauce (or 1/2 teaspoon of wasabi paste)
- 1 teaspoon soy sauce
- kosher salt, pepper
- 1 (10-ounce) bag salad mix
- 2 mini cucumber sliced
- 1 (8-ounce) package imitation crab meat chopped
- 1 large avocado sliced
- Other toppings: pickled ginger, sriracha mayo, ginger soy glaze, black sesame seeds
Instructions

Put the olive oil, vinegar, wasabi sauce, soy sauce, kosher salt, and pepper in a mason jar. Place the lid and shake until combined. Or put ingredients in a bowl and whisk until combined.

Divide the salad mix between two bowls. Drizzle the wasabi vinaigrette over top.

Divide the cucumber, crab, and avocado between the two salads. Add additional toppings such as pickled ginger, sriracha mayo, ginger soy glaze, and/or black sesame seeds if desired.
