Cheesy Italian Sausage Dip

An easy, cheesy pizza-ish dip made with Italian sausage, tomatoes, lots of yummy garlic, and spinach!

My husband said “Oh since it has spinach it’s healthy, right?!”

Haha, whatever you want to tell yourself, dear 😉

I served ours with a loaf of French bread that I sliced, brushed with olive oil, and toasted in the oven for a few minutes.

How to Make Cheesy Italian Sausage Dip

This is a one pan recipe since I am making it AND serving in my cast iron skillet.

Set the skillet over medium heat and add a pound of Italian sausage.

Cook 5 to 7 minutes, breaking it apart as it cooks.

Remove the sausage and place on a plate lined with paper towels to soak up the extra grease.

To the same skillet add olive oil, a diced onion, kosher salt, pepper, and crushed red pepper flakes.

Let the onion cook for a few minutes and then add 5 cloves minced garlic.

Cook 1 more minute with the garlic.

Then add 1/2 cup red or white wine, a can of diced tomatoes, and a Tablespoon Italian seasoning.

If you want to substitute water for the wine that works too, but if you are using wine make sure it’s a dry wine and not a sweet wine.

Next up comes the “healthy” 😉 part… 8 ounces chopped, fresh spinach.

This will cook for 8 minutes, stirring a few times throughout.

Finally, add in the cooked sausage from earlier, a block of cream cheese, and Italian blend cheese.

Stir until the cheese is all melted, which takes just a few minutes.

Then top with a little more cheese.

The cheese on top takes no time at all to melt since the dip is already hot.

Ingredients

  • 1 pound Italian sausage
  • 1 Tbsp olive oil
  • 1 onion diced
  • kosher salt, pepper, crushed red pepper flakes
  • 5 cloves garlic minced
  • 1 15 oz can tomatoes (I used Italian style)
  • 1 Tbsp Italian seasoning
  • 1/2 cup dry white or red wine (or substitute water)
  • 8 oz fresh spinach leaves chopped
  • 8 oz cream cheese
  • 2 cups shredded Italian blend cheese

Instructions

  1. Set a large skillet over medium heat. Add the Italian sausage and cook 5 to 7 minutes, breaking it apart as it cooks. Remove from skillet to drain excess grease on paper towels.

  2. Add the olive oil, diced onion, kosher salt, pepper, and crushed red pepper flakes to the skillet, still over medium heat. Cook 4 to 5 minutes, add the garlic and cook 1 more minute.

  3. Add tomatoes, Italian seasoning, wine, and chopped spinach. Cook 8 minutes, stirring a few times throughout.

  4. Add the cooked sausage, cream cheese and most of the Italian blend cheese. Cook until melted and evenly combined. Top with remaining cheese.

    Note: I served this in my cast iron skillet. If you prefer, transfer the dip to another dish and then top with the remaining mozzarella.

  5. Serve with toasted bread, crackers, or chips for dipping.
